How many should I apply for?
How many jobs should I apply for at once? I've only applied to one so far because I thought I had a good chance their, but I doubt one is enough. However, I don't want to have to back out of a job if two people are interested in hiring me, as I think it would make me look bad.

1) you qualify for
2) your application quota allows
3) you have enough time to write quality coverletters for
I hate to disillusion you, but it is rare that new providers have to decide between two job they are about to be hired for. It does happen to provider with some oDesk history and great feedback though.
Also, even if you do get hired for 2 assignments at the same time, it doesn't necessarily mean they will be both full-time, so chances are you will be able to work on both - and you won't find it out until you discuss the project during the interview with the Buyer.
So go ahead actively applying!

Apply for all you fit quals for
Apply for anything you feel qualified to handle.
You can't wait a month between applications because a buyer forgot to close a request.
