I want to start new assignment, but buyer is very big manipulator. I want to know, can I hide bad feedback in worse case...

You can only hide the comments, not the stars.

As far as I know, it only hides the comments given by the buyer (or the provider, if you are a buyer). It wouldn't hide the stars.

Feedback for every assignment worth at least $1 is visible on your profile. Only the comments can be hidden. Refunding the full amount will hide the comment, but this is only practical on a very small assignment.
The ability to simply hide the stars would completely negate the usefulness of the feedback system.
There are exceptions in cases of a buyer who has been banned (for fraud, blackmail etc.) - only then oDesk may step in to remove a feedback score.
