Best Practices Regarding Use of Content Writers

I am beginning to hire content writers for my website. I was surprised that none of the writers I've hired or talked to ever mentioned anything about receiving credit (i.e. by line) for the work.
Usually sites do appear to have a by line for their articles. However, I suppose we have no way of knowing if the named author is in fact the true author or if the article was ghost written. I suppose I could just make up names because I do own the content. Another concern is it appears that oDesk contractors have the option not to use their real name so I don't even know who I'm really working with.
Can someone with experience with content writers give me some advice?
Other random thoughts:
- Should I be concerned about the contract writer taking the content they create for me and selling it to other sites?
- Should I request the writers to sign a contract of some sort to ensure the work they create belongs to me exclusively?
