Google Docs Spreadsheet - schedule

I need someone to create a spreadsheet on Google Docs wherein:
individuals signs up for a date/time on a spreadsheet schedule and the time in the cell in the spreadsheet in blacked out so that (1) others see the spot is taken and (2) the names of who signed up for what slot are not revealed.
However, I should be able to log in and see the names in the slots.
Also, I would like to create a key stroke instruction document on how you accomplished this task, so I can adapt or create my own schedules in the future.
