We prepare 20-50 lb batches of ready-to-eat deli food including cold salads and entrees to be re-heated at the retail location where they are sold. We also produce both temperature and non-temperature sensitive bakery products.
Need HACCP utlilizing the 7 Principals for 3 item groups. Chicken Salad sandwich on bread, Deli Meat/Cheese on bread, and Pastries with tree nuts. I have started all of these but need better format and more advance analysis.
Looking for an easy to use format utilizing excel and word or similar type programs so can duplicate with other items. Should include process flow chart, with CCP, Tracking Forms etc.
