Move from Apache to Nginx and Optimize for High Traffic

We have a dedicated server of this spec:
Our current webserver is Apache 2.2.16
Our PHP version is 5.3 and FastCGI.
We use ISPConfig 3 on Debian 6 (Squeeze)
On this dedicated server we have 2 wordpress websites.
Both websites are basically clones and are image gallery sites that use a wordpress plugin and runs on PHP.
There are no users or comments. Just image packs that we load ourselves or scrapp with a php script.
One of the sites is 19GB total and the other site is around 250GB.
We want to use Nginx as our webserver and have the server optimized for hightraffic loads.
We want to make use of our 64GB of RAM as much as possible.
We want to use Memcached to increase the site's speed as much as possible.
We want to use the GeoIP Nginx module so we can target content/ads for different countries. ( http://wiki.nginx.org/HttpGeoipMod
Our site's are pretty much clones of this site but in a different language:
Our content usually doesn't change, we just add more every day. (Around 15-25 imagepacks of 60MB total) so we wan't to cache as much as possible and serve as static content with Memcached.
