Encrypt an SD card (Linux) thats in a Raspberry Pi

I need to encrypt an SD Card that I will have in a remote Raspberry Pi's that i SSH into. In the unlikely event that someone takes the SD Card, i don't want them to be able to access or do anything with it. I'm open to some encryption ideas. What method would protect me the most where as if they steal the card, they wouldn't be able to access anything on the pi or see how I have it configured even if they were to copy it? This method should also include if they tried to access or see the info from another pi or linux box? At the end of the day i would like to prevent any way for someone to see how i have the pi's configured and steal my idea for their own once they figure out and reverse engineer my pi. This encryption would also have to fit into my existing workflow of SD Images. Currently i clone all of my sd images from a 'mother' image.
