Microsoft Access Cascading Form with User Input to modify result

I have developed a database that includes product level sales data and sales projections for various price points. I need a form that expand to various levels of sales (categories, size, individual unit) and allows a user to toggle the price up and down to project sales at a new price point.
Changes at lower levels must dynamically roll up to upper levels. At certain levels changes should affect all sub product. I have an idea of how I would like this to work and look, but I am open to suggestions.
I have a decently strong computer background but little experience in access. I will likely continue to develop this tool and just need help getting it off the ground.
I have created the base form that should exist at the item level, I need to create the infrastructure where this would appear as you 'drill through' the levels of data. I desire something that looks like an excel pivot table of this info that show the input form at the item level. I have included an excel spread sheet that demonstrates my desired final output.
