Employee Training Documents Review

I am looking for someone who is EXPERIENCED with Canadian Labour Laws and Practices and would like someone to review the following 11 documents, 37 pages in total and advise if there is anything that must be revised. We are looking to ensure we do our due diligence with proper training procedures and documentation so should any issues arise with selling tobacco to a minor, or improper customer service handling, we mitigate our risk as much as possible and hold the employee responsible and accountable.
In addition, we are looking to create a 3 month probation document for all new hires to ensure if we for any reason do not feel that they are adequate for the job that we can release or fire them at anytime within that 3 month probation period.
