Developmental Editor with Nutrition knowledge to Edit Recipe Books

Seeking a developmental editor with Nutritional background <-Important
to go through existing vegetarian recipes and edit, replace, substitute ingredients to comply with specific nutritional guidelines.
Also, proofreading and grammatical correction will be necessary.
This will be done by :
Filtering out certain ingredients,
Substituting healthier ingredients for those removed and
Labeling other ingredients
This will be a vegetarian cookbook of natural and healthy recipes.
Always recommending organic.
Avoiding GMO (Genetically Modified Foods) as much as possible (like corn)
-Grammatical proof reading
-Making descriptions flow with good English
-Identify vegetarian vs vegan
-Basic or advanced understanding of nutrition and ingredients.
-Ability to identify and ideally substitute one ingredient for a healthier alternative.
Example: If recipe calls for sugar, you should know that healthy, natural substitue would be either stevia extract, honey or agave nectar. If it calls for margarine, you should know to substitute for grassfed butter or coconut oil or something else.
FILTERS (Partial list) You must be able to identify the following
-Processed foods (must be able to identify processed vs natural)
Soy products (UNLESS the soy product is “fermented soy”)
-Genetically Modified Organism (GMO) Foods.
Labeling: This means simply annotating that a recipe contains the following:
Corn (lableing as GMO risk)
Substitutions: When you see one, substitute for the other based on your best judgement
Margarine...Butter or Grass-fed Butter (remember to label as daiy)
Cooking oil (vegetable oil or canola oil)...Olive oil or coconut oil
White bread...Whole Grain or Sprouted bread
Pasta: Many pasta dishes use normal noodles. I would like any noodle dishes to offer the following suggested substitutions:
- Miracle noodles www.miraclenoodle.com
- Soba Noodles
- Kelp Noodles
There are multiple recipe books, each has approx 20 recipes +/-
Review ingredients in each recipe
Make appropriate changes based on the filters provided.
Make annotations/comments on any recipes where you have questions or are uncertain or have your own recommendations.
Proofread for grammatical correctness
Create a Table of Contents by listing out each recipe.
